"Hunan" is a high mountain province in Central China
where the food's fragrance is pungent and distinct, and it's
color is bright and sharp. The dishes are succulent
and the flavor clings to the food with a light glaze.
For those who enjoy spicy dishes, Hunan is similar to
Szechuan with it's hot, peppery taste; however, there is
nothing to fear. The use of black beans, garlic,
oranges and other seasoning provide depth and complexity to
the dishes and afford pleasant palatability. For the
